Sneak it in whenever possible. Get a medal of your patron saint and wear it; get a pocket rosary for your keychain. Say grace before meals even when you're with your coworkers (perhaps not even out loud - just cross yourself, bow your head, ask the blessing silently, cross yourself again, and resume conversation as if it was completely normal.) Political correctness is one thing - just remember that the Catholic League is there to fight for you if your rights of free expression are infringed.
